Are oats OK on a low glycemic diet? Are there ways to prepare oats that lowers the glycemic index?
— Barbara Fingold
Answer:
You want to eat oats that are less processed. You never want to eat the instant oats. They will likely spike your blood sugar. So I would stick with steel cut oats and remember that it's the toppings on your oats that are going to help regulate your blood sugar. So I have been taught that cinnamon, true cinnamon is a blood sugar regulator. I like using, um, some walnuts or other nuts on my oatmeal or greens and fruit and that should help.
