Question:

Do you have a trick to make vegan oatcookies crispy, while avoiding fat?

— Myra Dekker

Answer:

It is difficult to get a crispy cookie when you're not using any source of fat at all. And by fat I'm talking about a liquid oil. I like to use grape seed sunflower and extra virgin olive oil myself. And then you have vegan butters, which are fats made of fats. Um, if you're making oat cookies for example, without fat, you're probably using some applesauce instead or another fruit or vegetable puree and um, they tend not to get crispy at all.
