I have many different flours, can they be used in exchange for another. What would be a good substitute for all-purpose flour?

Answer:

Not all flours can be used in exchange one to one. Uh, a good substitute for all purpose flour. Well I like to make my, and again, I'm doing all plant-based, all vegan desserts, but I prefer with some exceptions to do 50 per start with 50% all purpose flour. And I use organic and unbleached all-purpose flour and 50% whole wheat pastry flour. Janet, that isn't whole wheat flour. That's for bread, not for desserts. And I keep those flour in my refrigerator because, or freezer because they haven't been stripped and I don't want rancidity to be a problem. So that's what I do.
