Question:
Why do you need to cut up veggies if you are making stock?

Answer:
The reason for that is so that everything cooks the same evenly. So if I am making a stock and doesn't have to be as, even as when I'm roasting it, but you wanna re you wanna increase the surface area, right? So if you throw in one carrot, it's gonna have about this much surface area, but if you cut it into pieces, it's gonna have like this much surface area. And the surface area means that the flavors are gonna be released more and it's gonna absorb some of the, um, rare pua that's in there, the onion flavor and things like that. So it's really about increasing the amount of absorbable area to make it even tastier.
