Question:
What are some creative ways to incorporate greens into recipes for someone who, from previous chemo treatments, cannot tolerate the taste of leafy greens as stand alone dishes. ?

Answer:
That's such a good question, and one that I see a lot from many people who have experienced different types of chemotherapy. So years ago before it was even popular, um, Jerry Seinfeld's wife, Jessica Seinfeld, wrote a book called Deceptively Delicious, and she incorporated vegetables into desserts and other things. So for example, in, uh, Jane Esselstyn's Prevent and Reverse Heart Disease Cookbook written by Ann and Jane, there's a wonderful recipe for a kale cake, and you would never, ever know that you were eating kale. Uh, so I would put them into desserts. Uh, they go well with soups. However, if you're going to put them into a soup and texture is also another issue sometimes for people, you might want to chop them up really well so that they'll go down with every other vegetable that is in your soup. I would also incorporate them into, um, veggie burgers, for example, in the Engine two Family Cookbook, I have a recipe for the Yo Adrian Burger, and it is loaded with kale. So there are just other ways. If you made a lentil loaf, you could chop up lots and lots of kale and you don't even taste it, and it doesn't even taste like kale. So you could also look at other greens like spinach. Um, I love arugula if you can tolerate that. But I think that you have to decide what will work best for you, um, what pleases your palate the most. And I think from my experience, I would share to start out making some delicious, uh, three ingredient oatmeal cookies, a banana oatmeal, and, um, maybe some applesauce if you want. And then throw some minced up kale into that. I make those for children all the time when I teach children's cooking classes, and they all love the cookies. So, uh, there's that quote from Louise Hay that says, life is uncertain. Eat dessert first. So this is a great way to start.
