Why causes my potato purée have a consistency like glue?

Answer:
You're over beating them. And, um, first you're going to mash them, and then you're going to add whatever kind of plant milk, but you don't want to over beat it, because what happens is that then all of the starches release, and then you're going to get something that, um, uh, almost resembles, um, wallpaper paste. And that's really true. I know that from my, uh, own experience. So, um, uh, don't over mix them. Oh, and I'm gonna say this, don't put them in the food processor. 'cause the food processor will absolutely make wallpaper paste. So if you either have a hand ser or if you have a hand mixer, or if you have a stand mixer, uh, I would recommend those, uh, rather than the veloc the velocity that you get from your food processor.
