Do you have any tips for transitioning away from cooking with oil?

Answer:

So, there are two kinds of people in this world. Uh, the first kind is the person who jumps off the deep end. That would be me, and the next person would be the person who, uh, holds onto the railing, excuse me, sorry, Is the person who holds onto the railing. I say gold, cold Turkey. It's the best way to do it, because the way that flavors hold on to those fat molecules is, um, what is your tongue's attraction? When you look at it from, uh, changing habits that it takes 21 days to change a habit, you could do a gradual, but I think finding ways to cook without oil. So you can steam, you can braise, you can roast, you can eat them raw, uh, and then making beautiful sauces to go with them is a way to do that. That's, that would be my, my recommendation. And I didn't mean to sound flippant up going cold Turkey, but I think that sometimes that is, um, what works the best. Because what I see in people is I just used a little bit of oil. And so if you are somebody who can't have any oil at all, that little bit of oil might be too much. Dr. Essel says right in this book, that moderation kills, um, that sounds like it might be very, very harsh. But, uh, also cooking with vegetable juices, uh, cooking with fruit juices. I mean, there are all kinds of things. And I think part of the fun is thinking, well, what's gonna work for my family? What are we going to like, you know, just kind of become an explorer and go out there?
