Question:

I would like to make a dark chocolate candy with a cooked and sweetened fruit. Think peanut butter cup with the fruit inside. Any helpful tips for doing this?

Answer:

Well, if you're making a peanut butter cup, you're going to be painting the inside of, um, a small candy liner or there are silicone ones also that are very easy to use. And then putting some peanut butter filling in and then topping it with more chocolate and letting it set. I could see that with any, I'm gonna try that Carol. I could see that with a wonderful flavored date paste or the cranberry that we were talking about. Anything at all, just cook the filling to a point where it's nice and thick and tastes good to you and let it set enough so that you can scoop it or cut it so it's thick enough. But that sounds absolutely delicious and happy holidays to you too.
