Question:

Any tips on baking in a oven that is supplied by propane or gas?

— Mary Gerstein

Answer:

I have never done that. I've never baked in, um, an oven that's supplied by propane. Mary, I have baked in ovens with gas, you know, an electric oven really to, to me. And many people would, or a lot of the experts say that the electric ovens hold the heat best. I was very used to a gas cooktop and when I moved to Philadelphia and there was no gas in this building, I was really sad. But now I learned to love a radiant heat cooktop. And in fact when I had an opportunity to get my new range, you know, I thought about induction because they're great, but I had pots and pans that I did not want to give up. No, no, no. So I stuck with the electric radiant cooktop. When here's a tip for people with small kitchens, I don't usually keep it there, but this is an induction, a portable induction cooktop that I use very frequently. So I would say make sure that your oven has enough of the gas. Make sure you have an oven thermometer there and just do a lot of testing and see if that is helpful.
