I don't recommend a certain brand to tell you the truth was asked just a little bit ago. But any knife that feels comfortable you're in your hand and can stay sharp. I was trying to make sure that the Tang will actually go through the handle as well. So the part that you hold on to should still have the metal go through all the way to the tip. The handle I use wusthofs at home, but I don't recommend those for everybody because not everybody likes the way they feel but that does have the full thing through the entire blade. So if you look at that as kind of an example, the one thing I do recommend is to go to a store that lets you. Try them feel them in your hand and see what works best for you. Hope that helps the key.
