Question:
I periodically make the Tempeh Bolognese Sauce from the FOK magazine that does not suggest pre-steaming. Would you recommend steaming?

Answer:
So I do typically steam, um, or boil my Tempe before using it. Um, but the reason I'm doing that is to get rid of kind of the bitterness and this kind of, um, odd taste that's with Tempe. If you don't do that. But if you're using a strong flavor, uh, sauce, you know, like a bolonese, you typically wouldn't have to do that as much unless it's really pronounced. But by and large, I mean, pretty much every time I use Tempe, I use that technique where I'm either gonna boil the Tempe or steam it off and more than likely I'm going to boil it before using it. Um, and that it really is just to be able to get rid of that kind of bitter flavor that starts off on it. But again, using a really flavorful sauce will bury that flavor anyways, so you wouldn't have to, and that's probably why Forks over Knives left it off of that one.
