Question:
I overcooked my lentils and now have lentil paste but it does have a nice flavor. I am thinking I can turn them into lentil patties, any advice on how I can save them?
— Mary Gerstein
Answer:
What you basically made Mary is a binder for a patty. So you can, you, you can use like a brown rice, um, you know, and uh, kind of work that into it. I mean, if the flavor's good on their own, I might even recommend just starting with the rice and just see how it goes. Where you can basically just kinda mix it in with the lentils and then do a saute on each side. You'll probably end up a really nice tasting, um, you know, patty, but because it's already into a paste, you basically have a binder, so you're looking for something to kind hold structure to it. So if you just chopped up some greens, maybe did a quick, uh, you know, steam on those first, um, drain out the liquid and then put it in with some brown rice and some of the greens and the lentils and you can form it into a ball and squish it down. That sounds wonderful. Um, you know, but you're basically looking to add structure now, uh, since it's turned into a paste. And that's a, you can, you'll have a lot of forgiveness with that. You can go with other grains as well. Um, you know, you could go with like a barley or something like that too. But, um, I would start with rice and kind of see how that goes.
