I’ve noticed the trend of enrobing cooked vegetables (sweet potatoes), raw fruits. Is it best to store in the fridge or freezer?

I'm assuming you mean dipping them into a melted chocolate or a chocolate ganache because that's what en roving means to me. Like this, like these little oranges for example. So it's best to depending on, you know, what it is that you're doing, raw fruits, I would keep them in the fridge. If you don't want your fruit or fresh vegetable to be frozen, they'll be nice and shiny when you first dip. And the they may dull, they will likely the coating will likely dull in the refrigerator, but if you leave it at room temperature it should just be fine.
