Question:

I live in 7000 Feet elevation. Baking can be a challenge. What are some suggestions for cake, pastries?

— Therese Sallenbach

Answer:

So that's high altitude baking can be a challenge. It is indeed. And there is no one answer to that because I actually added a, um, unit about this, about high, high altitude baking to essential vegan desserts because we have, you know, students all over the country and all over the world. And this is a situation I know that one of my daughter's friends lives in Wyoming, in Wyoming, and she told me that she made my chocolate cake to live for, and that it came up out of the pan and spilled all over the oven for her. Um, I did a bunch of research and it's very, was very interesting to me to find that there are, there really is no one answer. There are micro climates. So where you live, one town over might require some different adjustments. And I put just two links here. I think I, Bob's Red Mill and King Arthur both have very interesting information on high altitude baking. I think the best information you can get is to go to, um, universities. And so here's one from Colorado State. So good luck. What, good luck with that. It is doable. It will take some trial and error for you.
