How do you store citrus zest and how long can you store it for?

Answer:
It uh, depends on if I know I'm going to use it in a day or two, I might just wrap it, put it in an airtight container and put it in my refrigerator. Otherwise I store it in the freezer and take it out and use it when I need it. And it works really well, really well. My freezer right now has quite a lot of orange zest and lemon zest. I'm not the biggest fan necessarily of lime zest. I find it has to be very, I mean, I do zest things very fine if I've got this load of oranges now. So I'm probably gonna do some strips as well.
