Question:
How best to measure fresh herbs? For instance, the amount of fresh herbs can vary greatly: 1 T chopped fresh herbs vs. 1 T not chopped herbs. What is the best way to measure?

Answer:
Yeah, that is true. And so it depends on how you're using them. I've got over my shoulder, I think you can see I've got a jar of dill and a jar of parsley, and I'm keeping them like flowers. I keep adding ice cubes. And then when I'm not doing a live event, I've got a plastic bag over them and that holds it. So if I'm not chopping my herbs, I'll take a tablespoon, but I'll eyeball it and throw it into the pot. Otherwise, you know, I'll chop them. That's not, unless you have a very strong herb, it shouldn't be too much of a problem.
