Question:

I buy my dried herbs in small, dated & labelled plastic bags from my food coop. It is okay to store them like this until they're used up?

Answer:

You can, I mean it, you know, uh, uh, generally speaking, uh, foods, in this case, dried items do best in air tight containers. So maybe it's, um, folding over the top and putting a clip on it. Maybe it's a rubber band. Maybe it's putting these things into a common larger airtight, uh, container, uh, of some sort that works for you. On the other hand, if you use them up pretty quickly, then maybe there's no need to do any of that. And, and, um, so what happens with herbs is they lose flavor. Okay? And keep in mind that flavor and aroma have significant overlap, okay? And, um, you know, when we walk into, um, our kitchen or our pantry, and we smell the, the beautiful aroma, the bouquet of herbs and spices, know that your herbs and spices are losing flavor at that moment. Okay? And, um, uh, so it's best if you never smell your herbs and, uh, spices in terms of aroma that's escaping, but certainly when you open your container, you want nice, uh, robust aroma, okay? Um, so, you know, think about what's gonna work best for you, uh, in terms of, uh, the rotation of these items in your kitchen.
