Question:
If we remove salt from a baking recipe, will it only have an effect on the taste or do we need to be aware of other considerations too?
— Melissa Bryant
Answer:
So the scientific people will tell you that you need to have, uh, salt when you bake. I always, uh, have an, oops, I forgot to put the salt in kind of an attitude. And, uh, everything seems to come out beautifully. Uh, one of the things that I do, uh, in my baking is, uh, I will add an acid to the batter. So it might be a little bit of lemon juice, it might be a white vinegar, um, just so that everything rises. And if you look behind me that banana bread did a very good job rising. And, um, I I, I, I think that you, you might want to try baking one of your favorite recipes and not using salt and see how it comes out. And I don't think anyone would notice the difference. So you, you leave out the salt, but then you cover the top of it with some fruit or some, um, oat milk, chocolate chips or whatever to make it work. So sometimes you have to like, change out things to have, um, people appreciate all the work that you put into making something.
