Question:

Whole seeded tomatoes are an ingredient in "Simple Cabbage Soup"? Since you have to cut the tomato to seed it, why not use diced tomatoes?

— Diane Kirschner

Answer:

Yeah, you absolutely could use DIC tomatoes for that recipe. Um, that recipe is kind of to show a little bit of technique as well. Um, it's in some of our, uh, um, in that course in particular, and that dish is kind of early on in the course to be able to kind of get you looking at fresh ingredients in a new way. Um, but you absolutely could use like, even like a canned D tomato, especially if it's outta season. If you're making that cabbage soup in the soup in the middle of winter, I probably would err on the side of using a diced, uh, tomato can instead just because the diced tomatoes that are in that can, were picked at the peak of summer, um, or the peak of ripeness, and they're gonna taste the best compared to maybe a store-bought, uh, tomato that you would buy, um, in the middle of winter, which is not gonna have as much flavor, right? So, um, you can totally use the, uh, this, um, the canned version for that soup, um, instead of just using a whole, uh, tomato from the store.
