Question:
Do you soak or toast millet before cooking? If so how do these steps affect the outcome?
— Diane Kirschner
Answer:
Yeah, I typically do soak millets before I'm gonna cook it. I usually do it for at least 30 minutes, but you can do it overnight to be able to get it to kind of start out that process really early so it doesn't take as long to cook. Um, most people I know do soak it beforehand. You could toast it beforehand to get a little of that toast flavor to it, but then soak it afterward, um, you know, as well. But, uh, yeah, soaking it beforehand is gonna speed up the process when you're actually cooking it, um, and it's going to infuse a lot of the flavor. Um, or like if you use something like a vegetable stock, you can actually infuse the flavor a little bit doing that same thing. But I do typically soak it.
