Answer:

Try it and then you'll know why. So acid brightens the flavor of food, whether that's a stew you're making or it's a fruit salad or it's steamed vegetable acids, brighten the flavor of food. It brings it up a whole new notch. Um, so that's why the acid, why the zest makes it get so much better. I have no idea. It just does.
