Question:
What meal would you prepare to demonstrate the power of food as medicine?
— Chris Dunmall
Answer:
I would do salmon 'cause I love salmon and heads high on omega threes and a ton of leafy greens and more than one color of vegetable on my plate. So I'd probably have two or three and then I would have a whole grain. So if you're gonna say, what does that meal look like? Well, it's a quinoa salad with dried cranberries and almonds with some plum vinegarette and olive oil. And then I have steamed some kale and then I, then I'm gonna do a little bit of kale in the oven to make it crispy and chip. And I'm gonna put that on my salmon. I'm gonna roast beets like I did the other day. There we go. So you want at least two vegetables. You want a healthy source of protein, whether that's plant or animal-based fish, chicken, whatever. Um, and then you want your whole grains. And there are about 1,000,002 plus recipes and meals I could come up with that fit with food as medicine. Once you know the modular components, you're able to build it yourself based on right, your wallet, your palate, and your cultural heritage. So what my food as medicine meal is gonna look like as an Irish white person is gonna look different from someone from another culture.
