Question:
A Rouxbe recipe (basalmic reduction) called for lucama. I haven't heard of or used this before. Can you please explain it's use and best place to get it?

Answer:
I can't tell you the best place to get it. I know that if you do a search on it, you can find different stores online to be able to find it. Um, I do know what it is. It's basically a plant and I have a, a little, um, excerpt on it here as well too. And on that recipe you'll see that chef Char, um, actually did a wonderful explanation, uh, about that as well. So if you've seen a little bit of research into it, you can find out that it's basically a great sugar replacer that has a lot of vitamin in it, but it also thicken up things as well. And I do have to tell you honestly, out of all the thousands of times done a balsamic reduction, I have never used that ingredient ever. Um, I typically just use the balsamic to be able to reduce as well. So it's definitely not needed to be able to make a balsamic reduction. Um, but um, if you want to use it, it'll thicken it up just a little bit as well too. That's totally fine. But if it's a question of like, Ooh, do I really need this? You definitely do not. Um, I've never used it in the past myself at all. And, um, I can't tell you anybody that I know that has either.
