Question:
How do you know when to cover a food item with aluminium foil or not in a grill or oven? Meat, vegetables, baking, etc....
— ingrid ortega
Answer:
So typically that when you're covering something, what you're doing is you're making sure that you're keeping all the moisture on the inside of something and you're, you're not getting a crust on the top of it. So think of it like a lasagna, right? So when you're making a lasagna, um, you would typically cover the lasagna when you put it into the oven and let it cook for an hour or so to make sure all the ingredients are melting into each other. All the liquids are kind of bubbling up inside of that, but it's actually keeping all the liquid in. And then for the last 15 minutes you would take your aluminum foil off the lasagna, put it back into it, and it would crisp up on the top. So because, uh, there's no, um, you know, top basically keeping all the moisture in it helps to be able to crisp that top up.
