Question:
When using chickpeas from a can there is a liquid. Can the liquid be added if making a soup? Are there other things the liquid can be used for?

So here's the thing. If you are on a low sodium diet, my strong recommendation would be to drain the potatoes, uh, sorry, drain the garbanzo beans, and then rinse them off in a warm or tepid water. Because when you do that, you will remove 37.5% of the surface sodium on the garbanzo beans. However, if you do not have any issues with your sodium intake, and you will looking for a little added flavor, by all means throw in the aquafaba, it'll also help the texture of the soup a little bit. Um, yeah, I think that that, uh, is a, uh, is a good recommendation. And to that point, uh, I'm sure many of you are aware that, uh, earlier this year, the World Health Organization is looking at a number of 1500 milligrams of sodium consumption per day per person. So if you're somebody who does need to cut back on their sodium, that 1500 number, um, is, um, a good way to go. Years ago, um, physicians would write prescriptions for a two gram sodium diet thinking that that was low sodium, but it came out to be about 2200 milligrams of sodium. So it was way over that norm. But that's a really good question, and I'm sure that your soup tastes absolutely delicious.
