Question:
If I am fully cooking a vegetable and shocking with ice water, do I have to serve it cold or can I warm it?
— Camille Campbell
Answer:
I like to dry them on a, on a kitchen towel, uh, you can reheat them whether you're going to make a stir fry or whether you're going to throw them into a soup or a stew, you would throw them in towards the end so they don't turn that gray color that the broccoli I had growing up was because my mother would overcook it for hours and hours. So yes, you can cook those vegetables that have been cooked previously that have been shocked with that beautiful, beautiful green. You don't wanna overcook them because you still wanna see that beautiful deep green or orange or whatever color your vegetable happens to be.
