Question:

What are the benefits of a Silpat, outside of easier clean up? Better than parchment paper? Is it only for no oil baking/ roasting?

— Pauline Lucas

Answer:

Yes, it's definitely great for cleanup. Is it better parch better than parchment? Um, I would say that I like it better than Parchment just because it's not creating as much, you know, uh, waste for it. But it also, parchment paper has its uses, you know, so like steamers, like when I'm doing a steamer basket of like, um, you know, uh, dumplings or bow buns or something like that, I'll use parchment paper and still put it, you know, holes in it between the, the bamboo steamer or something like that. Um, it's great for no oil baking and roasting, but you can use it for oil baking and roasting as well too. Um, they work great just to be able to keep your, your pans cleaner and make it easier to be able to clean up for certain, uh, they do help conduct the heat a little bit better, what I've seen as well too. So for the roasting process, especially in no oil that works wonderfully and in no oil baking and roasting, a lot of times you are putting a little bit of liquid over the, um, whatever you're baking and roasting. So that helps to be able to keep the, the mess down as well too. So yeah, I do love a sopa. I don't use it all the time, but, um, you know, they are a good thing to be able to have.
