Question:
Can you share any suggestions for handheld meals for lunch boxes? My teens are always pressed for time to finish packed lunch.
— Maria Debora Luceria Diaz
Answer:
So, um, handheld meals that I usually do for my kids, I'll usually go with a burrito or a taco, like a, a bean taco is probably one of my go-tos for my kids. They love them and you can add all kinds of different things into 'em. Different kinds of vegetables, lettuces, uh, radish, all kinds of fun things to be able to do it. Uh, the um, the tuna salad that we have on Rouxbe is another one of their like favorites. They don't like it with the, uh, seaweed, so we call it the un chicken salad. Um, but it's basically like either a cashew cream or vegan mayo, uh, or chickpeas with pickles and lots of pickles. There always more pickles for them as well. So I like the burrito idea because it's really, uh, approachable. It's easy to fit in a lunchbox. It wraps up really easy. They hold pretty well as well too if you're using a vegan mayo, it actually holds better the regular mayo with. Um, so those are really great too. Now you can get experimental with things too. Uh, you know, I've done sushi for them as well too, which is great. Uh, nice and handheld. Uh, it's definitely raises some eyebrows at school and the kids look at it, but sushi's an easy fun thing to be able to make with kids even. Um, and it's something definitely special. Um, but just, you know, the handheld items are always, uh, great for the school lunches because having something where you have to dig, you know, a spoon or a fork into it is definitely more laborious for a kid, especially on a short amount of time.
