Can unsweetened applesauce be used in place of oil in your pumkin spice muffins?

Answer:
Alice, I have not yet made them that way. So I can't give you a definitive answer. But I think there is a very small amount of added oil and I think it would work. What I would do if I were you, and some of you have heard this over and over and over again, but it bears repeating, cut the recipe in half or even by a quarter and try it and see applesauce and other fruit sauces, uh, act as moistening agents. There's some pectin in them and they bind, but it's different. So you're going to get, you very often get a very nice result. We have a whole unit on this in essential vegan desserts, but you're not going to get the same crumb. So just expect it to be a little bit different. Okay?
