So I'm thinking that you were using hemp milk to make the ganache for the truffle, but I'm not sure. But as a general rule, if your ganache doesn't set up firmly enough, just melt some more chocolate and add it in all throughout the course, the recipes and you know, we'll say even with the agar gel, take a tablespoon, put it in the refrigerator as it tests before you go to complete your dessert. Let's see how firm or luc it is. The same thing with the ganache. You, if it didn't firm up enough, either you didn't keep it in the fridge long enough or there was too much liquid for the amount of chocolate.
