Can you talk about the best processes for defrosting food?

Answer:
The process ideally is done under refrigeration. And so you would transfer the item from the freezer to the refrigerator and give it adequate time to defrost. And how long is that? Uh, that's always the question that I get. And once again, it depends. That's the, the beauty of handling food. And the fun thing about cooking is very often the answer is, well, it depends. And certainly there are variables at play, and that's why it depends. And so when it comes to, uh, defrosting food, um, it'll depend upon the, the size of the, of the block of food that's frozen. It'll depend upon the density, uh, of the food. Um, and it might even depend on where you put it in the refrigerator. Is it closer to the door IE the front of the refrigerator, or is it toward the back of the refrigerator, which is a colder location? Um, that will affect the defrost rate. Okay. And, uh, so, you know, it, it could be a matter of hours, it could be a matter of days depending on what it is. And it might require that you give it a poke or a prod or a stick, you know, with a, a, a skewer, uh, to see, uh, if it's progressing, um, if know at the rate that you're expecting. Okay? Uh, and then once the food item is defrosted, keep in mind that, uh, the bacteria that were there before are still there. And while they might have been, uh, dormant or, you know, taking some sort of a nap in the, in the freezer, they will be reawakened and they'll start, uh, doing their thing again. And that is, um, working to, uh, break down the food. And so once you defrost something, that clock that started earlier prior to freezing, it continues, um, after the item is defrosted. Okay? So you keep that in mind and try to use the item just as soon as you can in order to avoid losing it, okay? To, to spoilage. All right.
