Question:
What techniques can you suggest for cooking dry soy beans?
— Laurie Wallace
Answer:
Yes. So, um, uh, soybeans, uh, take, uh, some good soaking, at least, um, that's been my experience. I, you know, with, with most legumes, uh, and overnight soak is recommended overnight, you know, means say 10 or 12 hours or so. And then, um, ample cooking time, soybeans, uh, can be a little bit firm even after cooking for a long time. And, um, but if you, you cook them longer, you can start to soften them up even more. But it does take some time on the stove topic. Um, now you could try to pressure cook them all right, which will shorten the, um, the time. I don't have a reference off the top of my head, but here again, you would need to do some testing, some recipe testing, uh, and then take, take some notes along the way, because it'll depend upon your, uh, your machine that you're using. Um, you know, as, um, they have some different internal settings, right, in terms of the pressure at which they cook. And sometimes you can even set, uh, the pressure manually. Okay? So, uh, it just takes a little bit of additional time if your beans came out, undercooked. Okay? That's gonna be the biggest variable. Thank you.
