Question:

Is there a way to make a vegan version of the gobbler sandwich from Wawa?

— Social Media

Answer:

So I don't know how many of you live in Philadelphia or New Jersey or Maryland, Delaware, even as far as Florida Now, we have a store called the Wawa. The Wawa is to this part of the country, to what Bucky's is to the South, or seven 11 or, uh, Tesco in England, you know, the little small shops that they have. So at Thanksgiving time, they make a thing called a gobbler. And I was sharing with our producer that people line up for blocks to wait online, uh, for getting this sandwich. And I don't even know if it's made of real food. But I did wanna show you an option that you could do after your holiday dinner. And, uh, here's what I've done. You know, I'm gonna hold this up. Hopefully you can all see this. I made some home Mary homemade cranberry sauce. What do you do? You throw a bag of preferably organic raw cranberries into your blender, maybe a quarter of a cup of orange juice, and a couple of dates or maple syrup. And then you're just gonna pulse it and pulse it and pulse it till it gets good. And when you first finish it, it's going to almost look like a slurpee. But overnight you'll see that it really gains some texture to it, and it's very delicious. I made some stuffing, and you can easily make a stuffing with something like, uh, here we go, Ezekiel bread or Ezekiel rolls. You can use any kind of bread. You do not need butter. You do not need oil to make a savory delicious stuffing. I put some dried cranberries in here, some celery, some onions, uh, a lot of really delicious spices. I made a mushroom gravy. We have a delicious mushroom gravy here at Rouxbe. Um, this has been sitting out for a while, but it had a beautiful texture when it was cooking. And another ingredient to the gobbler is this is some Satan that I cooked in once it was finished baking, I put it into the gravy. I have some collared greens because you always wanna make something more nutrient dense than it is. I just sauteed this in a, maybe an eighth of a cup of stock, and it's very flavorful and delicious, and sorry for the clanking. And last but not least, this is hummus that I seasoned with poultry seasoning and garlic powder or garlic granules rather, and then made it into a nice mixture because there, there are people in the world who don't know how they can live without mayo, and some of the vegan mayos are very high in fat and calories. So doing something like this is still going to create and give it a most delicious flavor. So you have that, and I'm banging this. I'm sorry about that. The other thing I just wanted to talk about is if your guests are leaving after dinner and you have a lot of leftovers, you could set up a takeaway bar or a to-go bar where you would have those ingredients out on your table. And, uh, these are the rolls that Ezekiel makes. They're really, really delicious firm sturdy. They take well to a sandwich that has got gravy and other things on it. The other thing you can do is the beautiful stuffing that I made, you could make waffle stuffing to go, and then you could make your, you could build your sandwich on that. Now, I did wanna show you one interesting thing. So when I was doing some recipe testing with these, these, I added, uh, one teaspoon of ground flax meal to the stuffing, and I added three, uh, teaspoons of water and I mixed it around. And then I used my hands to create a really good mixture. So these have a really nice texture to them. I put them in a waffle, a little individual waffle iron. They're really tasty, they're really good. However, I wanna show you the one, the first one that I made did not have any flax meal in it, and it fell apart a little bit. So I think the flax meal really does help it stay together. The other thing is that if you're making to go platters or letting your friends or whomever make their own sandwiches, these little two ounce, uh, or two tear cups that you can get at the dollar store at the grocery store, pack the gravy in here so they don't have a mess when they, when they arrive home. So just a little test now, see what you like. Um, take that favorite recipe of yours, convert it and just keep going. And, you know, spices, uh, they say varieties the spice of life, but spice is also the life to a plant-based dish that does not have any oil, salt, or sugar in it. So hope you enjoyed that. I have to tell you, I haven't eaten lunch yet, so you know that I will be eating these one minute after our event is over today. And if anybody lives near Philadelphia, come to my house.
