Question:

I am looking for a favorite dish to make frequently so I have a GO to Eat in Emergency or something I can cook every couple of weeks. Do you have a favorite dish?

Answer:

This is where a crockpot really does come in handy in terms of making a lentil soup, a lentil stew chili, seen Carney chili without meat, et cetera, et cetera. Bean based lentils, whether you use tofu or not, or whatever. So I think that, um, finding things that you like and veganize them Now that soup season is here. I make a different soup every week and we'll have it for lunch and dinner, uh, a couple of nights a week with a big salad or different vegetables or, or whatever. So find what you like, find a, find a way to veganize it, enjoy it, share it with others. If you're not sure how good something is, share it with a friend or a neighbor and ask them for some honest feedback. They always give honest feedback and, um, I'm just trying. I do like making chili and I like making soups. Satan is another one because it's so versatile, uh, and, and, and not to forget the bounty of fresh produce that's available 365 days a year because there's always something delicious. So there we go. I think I should buy stock in Japanese sweet potatoes because we use them for all kinds of things here. Um, one of my favorite recipes is from Jane Leston. She batch cooks a bunch of sweet potatoes and keeps them in the refrigerator and it's time for dinner. And when her children were young, she had three young children very close in age. She would slice a bake cooked baked potato in half, and then make a mango bean salsa and serve it with a salad and some brown rice. So there are the, the possibilities are endless and you have to make things that you like.
