Question:

Can you talk about which dishes to prepare in advance for a holiday dinner? I’m considering a salad with spiced and baked squash, a green bean dish, gratin potatoes, vegan lasagna.

Answer:

Those are great things and you know, I'm a huge proponent on holiday dinners, you know, um, it's one of those times when you get like family together and friends together, um, and you don't wanna spend all your time in the kitchen, right? So preparing in advance is a great idea. So as much as you can do beforehand, either prepping vegetables or getting an entire dish ready so you can just put it in the oven and leave it for an hour or so and bring it out when it's time to serve, is a great idea. I love your ideas with the, um, you know, the, the potatoes and lasagna, the green big dishes, all of those can pretty much be prepared in advance the salad. You just wanna make sure not to put any dressing or anything on it. Don't put any of the hot baked squash or anything on it until the very end. Um, you know, so just make sure you got all those things kind of lined up so you can do as much ahead of time and then, uh, you know, kind of serve after everything's been sitting for a little bit. Um, the grotten potatoes can all be prepared in advance. The green bean dish might be a little tough because you want to typically blanch those and put 'em in an ice bath, but you can do that ahead of time and have them ready just to kind of quickly heat up if you're doing some sort of green bean dish. Um, I've messed around with very traditional, you know, recipes for green beans, um, that, uh, work great. Um, or I've even, you know, done the green bean casserole and I've even done 'em with, it's like a dip and things like, uh, but there are a host of different, uh, recipes that you can do to be able to prepare in advance a little bit. Um, that includes desserts too. We're usually a pretty easy one to be able to, uh, prepare in advance. But if you do have to do something, you know, while you're cooking over it, make sure it's something simple enough that you're not, you know, in, you know, running around the kitchen like crazy.
