Question:
I’m looking to make some Hermits, and I’d like to ice them—what are your suggestions? Ideally, not too much sugar.

Answer:
So hermits are spicy and they have nuts and they have raisins typically, um, generally speaking, the icing on a hermit cookie would be like a confection or sugar icing, which is confection or sugar is powdered sugar with some amount of starch in the sugar that just to keep it from caking. I have noticed over time that non-organic confection or sugar, sometimes you see it as 10 x, the starch will be corn starch. You have to pay attention to that if you have people with corn allergies and I only use cornstarch that is organic and non GMO and I'm sure that's the case for Chef Char as well. Um, and so confection or sugar and a small amount of milk, a plant milk, a juice, or even water will make that icing. I think Char, knowing you and what you like and hermits, I would take, I would powder some maple sugar, very, very fine. So that means a blender not food processor. And if you're pattering a half a cup, I might add a half a teaspoon of corn starch or tapioca starch. Organic confection or sugar tends to have tapioca starch in place of the corn starch and then add a very small amount of liquid small amount at a time. It's always surprises me to this day after so many years of making icing how little liquid you need to make a glaze, like a confection or sugar glaze. And I think Char, I'd love to hear how that works out. And then of course, you don't have to ice the whole cookie, you don't have to glaze the whole cookie. You can do a couple of lines on there and that's all. So I would love to know, I'd like some feedback on that, tell me how that works. But I think the maple sugar glaze would be really delicious.
