Question:

How do you coat your baking pans to prevent sticking to the pan?

— Mary Gerstein

Answer:

So typically I use parchment paper, I oil my cake pan and then I fit the bottom with parchment. Um, however, if you have up here I have decorative cake pans and here's a cornbread, a corn stick pan. It's adorable, it makes the cutest corn muffins but in the shape of corn. So in that case I use a spray that is oil and flour or you can make your own, but you really have to use that and you really have to spray, spray, spray and then turn it over and it shouldn't stick. If something isn't coming out of the pan after you make it, don't force it. In that case, I will either put it back into the oven for just a little bit or more likely put soak a kitchen towel in very hot water and put it over the bottom of the pan, you know, not the cake part and then it should come out.
