Is there a way to make a meringue cookie without using egg whites?

Answer:

Well, yes there is. It's called aquafaba. And what I'm showing you here is not a meringue cookie, it's more like a pavlova. But I made a lot of aquafaba. This is two weeks old. Um, I made a lot of aquafaba recently and I had some leftover, and I don't know that you can see the dots in here, but I decided to add some burlap and barrel. What'd I add? The, a little bit of cardamom. It was delicious. And then I deh dehydrated it just the way I would a meringue cookie. So yes, you learn to use aquafaba and make yourself some meringue cookies. We teach that in essential vegan desserts as well.
