Question:

Do you parboil or otherwise treat your rice to decrease arsenic content? Tried this but found it make the rice mushy when done. Any tips on this, or is it just a case of overreacting?

Answer:

You know, the first thing I wanna mention is that, um, you know, arsenic content in rice can vary quite a bit depending on the source of the rice. And so it may be worth, uh, some, some deeper reading, uh, on your part to identify, you know, which regions around the world, um, are connected to more or less arsenic in the soil that is, uh, taken up by the rice. And, uh, you, the, uh, a common culprit, I guess, or, or association, is with whole grains where the arsenic is held in the brand, uh, and the, the other components of the rice that are, uh, part of this, this better product for us, right? The whole grains. And so a lot of people will soak the rice, uh, for overnight or for some number of hours, and then just discard that water. Uh, that seems to be a, a fairly innocuous process that doesn't, uh, adversely affect the, the end result. Um, I have not parboiled rice, but, you know, if you wanted to stay on that path, you can certainly, uh, try to decrease that time and, uh, cut the water, replenish it, and then continue cooking. Um, that sounds like a fair amount of work, but, uh, again, soaking is a pretty common approach for those that have some concern. Now, as for the amount of concern or, or, you know, is this overreacting or not? I'm not sure. Uh, I think it really, it, it should just depend on what the individual, um, you know, uh, you know, wants to, to be concerned about relative to their own health. And of course, take a look at some additional sources of information to see if there is, uh, some new information that might, uh, address this particular concern.
