I want to make air-fryer fried green tomatoes; I eat WFPB - how do I get the breading to stick without egg or oil?

Answer:

Okay, so, uh, the replacement for, uh, well, let me, let me back up a step here and say that the standard breading procedure consists of three steps, and the first one is flour. The next one would be an egg wash. And then the third one would be the bread crumbs. So here we can use the first step of applying the flour, dredging the product in flour, and then the sec second step here, where traditionally an egg wash would be used, we can replace that, for example, with a plant-based milk slurry that's made with the addition of corn starch. You could use another starch as well, but corn cornstarch is an example. And what that will do is set up as the product cooks, and that's gonna provide a little bit of structure and adherence for the, the next step, the breadcrumbs as the product cooks. And egg wash does a similar thing, you know, as it sets up under heat, it provides, uh, more structure and will hold on to the breadcrumbs. So that would be the, the big change, right in the standard breading procedure. And then regarding oil, you know, I think you can probably just give this a try in your standard air fryer method, you know, which may be zero oil, or it could be the addition of a very small amount of oil that might be spritzed on or otherwise used in a way that you find best, uh, for your situation. And, you know, as you cook, uh, items, you know, especially a breaded item, without oil, you will get uneven browning. That is very simply, uh, a, a common result of making that modification. So, you know, you'll need to find a balance in terms of the visual aesthetics, right, that you can live with.
