Question:
I'm struggling with my truffle ganache. It's summer here, and temperature in my kitchen is around 28 Celsius most of the day, and about 65-70% relative humidity. Anything I can do re ganache?

So the first thing I will say is, I don't know where you are in the program, but, uh, if it, if it's something that can wait till the end when the climate is better, you can do that. One of the other things that we recommend to students is to make it at the coolest time of the day where you live. If you have air conditioning, put the air conditioning on. And my other suggestion is that if, uh, you still have questions about that, I would definitely go to the website and ask a question to Chef Fran, who is the director of our essential vegan desserts program. And she knows the answer to everything. That's how I bake in the summer. Uh, we live in a 100-year-old house that doesn't have central air, but we do have a kitchen unit. So I get all of my work done very, very early in the morning. And by early, I mean between 5:00 AM and 7:00 AM I don't know if I've helped you that much, but those are a couple of ideas that, uh, that you, that might be helpful to you.
