Question:
Any tips on how to cook chickpea pasta? Mine does not seem to soften enough, even if I go a couple of minutes over the boiling time on the package.

Answer:
Do not overcook the chick pea pasta. You can follow the ingredients. I mean the, um, the information on the box, the instructions on the box. I would undercook it by a minute. I would rinse it as suggested, and then I would put it into a pan with my sauce so that it would cook for an additional minute and you would arrive to the texture that you like. But you chickpea pasta, I find, to be the trickiest of them all. I personally prefer using corn pasta. And, uh, that seems to hold together a little bit better than the bean pastas, but that's just my experience. Follow the directions, cook it a minute less, add it into your pan of sauce, into a saute pan with sauce, and I think you'll arrive to the, uh, texture that you are accustomed to with regular dishes.
