Question:
Do you finish with salt using a salt cellar or saltshaker at the cooking station? Should I even put a saltshaker on the table at all and do the salt finishing before serving?

Answer:
I say finish it in the pan, plate it beautifully. Add a garnish, make it look good. If you are wanting to move away from adding so much from adding extra sodium to your dish, I would not put a salt shaker on the table, but perhaps you could put a little bottle of, uh, a little decanter of some low sodium tamari or, uh, some of the brags. I know most of us associate soy and tamari with, uh, Asian cuisine, but in terms of flavor, I think that will do the trick. Uh, I think, uh, that that's what I would do.
