Question:
Please talk about oil-free cooking. Is there anything other than vegetable broth or water that you can use for cooking?
— Beverly Verwey
Answer:
Yeah, actually there are a lot of different things you can do, uh, to, you know, besides oil, vegetable broth or water, when we're doing oil free, uh, water is probably the most used. Um, you know, it's just really easy. It doesn't add any flavor to it, but it has helped to cook or do a steam sa on things. Vegetable broth is great, um, you know, because it'll actually do some of those things. It'll add flavor, it'll actually add a little bit of color to things too. A lot of people don't think about different varieties of vegetable broth as well. So instead of just a standard mere POIs kind of that vegetable broth with a lot of different things mixed in, you could also do something like a mushroom broth to be able to add a great umami flavor to something. Um, so there are a lot of different kinds of, uh, broth styles you can do with that as well. Now, beyond just using the broth or the water, there are other things that you can use. Um, like alcohols actually work really well. So you can do like a white wine and a lot of times when you're doing mushrooms, it's good to deglaze the pan with something like a white wine. It actually adds a really great depth of flavor to it. Some people will cook with beer as well too. Um, but you can also do other things like, um, you know, vinegars or different acids as well, depending on the ingredients you're actually actually cooking with. But by and large water or vegetable broths are probably the most used in oil-free cooking. But feel free to experiment beyond that as well too.
