Question:
When sautéing vegetables and other foods, is vegetable broth a viable substitute for olive oil?

Answer:
Yeah, so like, as we had mentioned before, uh, you know, doing a vegetable broth or a water is a great substitute when you're doing no oil cooking. Um, it does act a little bit differently. It's, it's not a non-stick, right? So oil, what it helps to do is create a non-stick surface on the pan that you're actually cooking in. Um, so if you're using a vegetable broth or a water, you're going to probably have to add a little bit more to it to make sure that it's not sticking to the pan. And what we're talking about there is just when it starts to caramelize, the vegetables have a natural sugar that kind of comes off and it's that browning that happens. And what you need to do is just add a little bit of vegetable broth or water to your pan to be able to deglaze the pan, get that, uh, caramelized, um, you know, the, the sugar off of the pan and put it back onto the product that you're cooking as well. So it, if you're doing a vegetable broth, it will add a little bit of flavor depending on what you made your vegetable broth out of. But if you're using water, that won't happen. Um, so typically when I'm doing it, I'm going to be using water unless I wanna specifically add flavor to something from a vegetable broth.
