Question:

Any suggestions for easy variations on vinaigrette dressing? How about any other favorite, easy to make, salad dressings?

— Mitch Miglis

Answer:

So just a standard vinegarette dressing is typically going to be a good amount of oil and um, um, a vinegar, typically a balsamic and then a lot of different herbs basically. Um, you can mix those up, do a salt and pepper, then maybe either do a thyme or you could do uh, you know, typically dried, um, you could do a herb to as well too. And then just basically shake those up to be able to get those flavors out. Now if you're avoiding the oil, um, vine GRE's gonna be a little bit different. You can still go with the acid base of a vinegar, but you want to add more water to it and then also put your dried herbs in it as well. Now it's going to be a little bit more bitter as well. So some people will actually add a little sugar to that if they're not using the oil. Then that brings up the question if you're reducing your oil because of the caloric intake and adding sugar, right? You need to watch out between the two of those. So it's kind of like you have to kind of make your decisions in each one of those. But you can always try with just the vinegars to be able to start out with your dried herbs to be able to see how that goes. Add a little bit of water so it's not too, uh, bitter, um, on the tongue as well on easy to make salad dressings. There's a lot of different ones, um, that I like to do. I like to do like a green goddess dressing. Um, I like to do Caesar dressings. Uh, both of those are, uh, I usually do either a tofu based, a silk and tofu where I'll take a silk and tofu and add like, um, a couple different like dolls or seaweeds and different like dill to be able to make uh, like a Caesar kind of a thing. Um, or you could do a, you know, a vegan ranch out of something like that. Um, but if you're gonna do like a green goddess, I'll usually use an avocado and then different herbs as well too. Dill is typically on my list for that. I might put in some parsley cilantro if I'm doing something on like a Mexican meal or something like that. Um, a little bit of vinegar into that as well too. Blend all that up until it becomes nice and creamy. Uh, you can add salt pepper if you want to as well, but just uh, you know, I'm always using fresh herbs or greens in my green goddess dressings as well too. So experiment with it a little bit. I'm not giving you an exact recipe, but you can take a little bit of this, try it out and then try it for the next time. The great thing about doing a green GSS with avocado is you can just do it with the one avocado. You don't have a ton of it, right? So you can make a small amount. Um, you do wanna add a little bit of acid, either lemon juice, lime juice or vinegar to be able to make sure that it doesn't turn brown on you. But the great thing about doing just the avocados, you have a small amount to be able to experiment a little bit more with it 'cause you'll have enough just for the night or the next day to be able to use it. Also works great as a dip too.
