Question:
You mentioned freezing mushrooms. I haven't tried that yet; can you please elaborate?

Answer:
Yeah, that's actually a pretty simple process. So after we've gone foraging or um, been gifted mushrooms from foraging, uh, will typically put them, um, will dry wash them out very, very well and then, um, put them onto a towel to be able to get them dry and want to get them super duper dry and then put them into a mason jar and put 'em in the freezer. Um, and I'll basically just freeze 'em just like that and when I take 'em out I can just use them as I need them to be able to get them, um, you know, can just add, add them to other dishes like I would normally use 'em. Um, I'll let them thaw but not all the way to, you know, all the way thawed out and uh, just kind of use 'em and chop 'em up and they work great like that. Um, I also dry them, um, mostly I'm doing this with oyster mushrooms, which you can do 'em with all kinds of different mushrooms as well too. Um, so yeah, freezing them wonderful way to be able to keep them over the winter. Um, just because I have a neighbor who loves to go foraging almost every day, so knowing that I'm a chef, he comes with to me with just grocery bags full of mushrooms all the time and even if I eat mushrooms, every single dish, I can't eat them all. So I wanna be able to save them for the winter time as well.
