What can replace tomatoes in all variations as I have someone who cannot have it in any form?

Answer:

So I, I saw this question early and it took me right back to my days at Angelica Kitchen, which was really the OG vegan restaurant. It was on the lower east side of Manhattan. And, um, we made something that was so delicious and it was called a no tomato sauce because we didn't use any nightshades in that restaurant, meaning tomatoes, potatoes, eggplant, peppers. There's one more and I don't remember what it is. Tobacco, I think it is. And so we did this no tomato sauce and I think you can do a search and probably find it. I've got some older cookbooks that will have it, but actually it's beets take the place of tomatoes. But honestly it tastes like tomatoes. So you know, you're not gonna replace tomato in a tomato, um, sandwich with that, but you'll be able to do a sauce.
