Can you make some suggestions for substitutions for mushrooms please?

Answer:

Oh my gosh, I love mushrooms so much, but I know not everybody does. I would get, you know, when mushrooms cooked down, they get nice and chewy. So I would do almost any vegetable roasted, chopped into small pieces. And then you can, um, you want some nice umami in there. Use lots of good seasoning.
