What role does ingredient sourcing play in maximizing flavor, and how do you approach selecting high-quality ingredients?

Answer:

That is a question that those of us that have money to spare beyond the basics are asking ourselves. So, uh, I like to go local. I think going local is one of the best things you can do in terms of flavor. It's grown right there. Uh, I can get it when it's just picked. I don't have to wait the days or weeks for an, uh, an ingredient, a whole food to get to me from across the country. It's better for our planet, it's better for my palate. Um, so sourcing locally is definitely one thing. I love to check out local places. Um, I always like to find the spice place in every new town I go to Godo in Portsmouth, New Hampshire being one example, um, of a place I go to for really high, um, sourced herbs and spices. And you just kind of ask around, I ask around to my chef friends or if I'm going to eat something at a restaurant, I'll ask, Hey, where'd you get this? And a lot of times they're actually showing you where they source things from.
